Corn zucchini fritters

Ingredients to make Corn zucchini fritters

  • 2 cups shredded zucchini
  • 1/2 cups corn kernels
  • 3 garlic cloves, minced
  • 1 cup chickpea flour
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt & pepper

How to make Corn zucchini fritters

  1. In a large bowl, combine shredded zucchini, corn,, chickpea flour, garlic, cumin, oregano, salt & pepper
  2. Stir together until well combined. Allow to sit for at least 5 minutes.
  3. Warm a large non-stick skillet over medium heat.
  4. Grease with cooking oil then scoop out 1 tsp of the zucchini mixture at a time into the pan. Cook for about 3-5 minutes on each side, until light golden brown
  5. Serve warm with sauce, chatny or any dip
