ABOUT Gur ke chawal aur Rabdi RECIPE

This dish a very traditional benarasi dish. Olden days when poor people never had money to buy sweets from out, this was made as a dessert for guests. Cows almost all had so rabdi was easily made.

Ingredients Serving: 4

  1. Milk 1 litre
  2. sugar 10 tsp
  3. chopped dry fruits 2 tbsp
  4. cardamom powder 1/2 tsp
  5. saffron 3-4 strands
  6. Boiled rice 3 cups
  7. Jaggery 1 cup crushed
  8. Cinnamon 1 inch two pcs
  9. cardamom 2
  10. ghee 1 tbsp
  11. Finely sliced badam for garnish

Instructions

  1. 1. Boil milk, reduce to 3/4 to make thick rubdi.
  2. 2. Add sugar, dry fruits, elaichi powder.
  3. 3. Add 2-3 strands of kesar.
  4. 4. In a pan add ghee add the cinnamon and green cardamom. Saute for a minute and add the boiled rice. While boiling, take care and boil the rice a little more than 3/4 done. Mix well.
  5. 5. Add jaggery and mix well on low flame.
  6. 6. Remove and serve. While serving add rabdi on it and garnish with finely chopped badam.
