Ingredients Serving: 4

  1. Tero Leaves or Kochu Saak 2 kg
  2. Salt 5 tablespoon
  3. Sugar 2 tablespoon
  4. Hilsa Head or Elish Maach er matha 200gm
  5. Cumin powder 2 tablespoon
  6. Corriander powder 1 tablespoon
  7. Red Chilli 3 pcs
  8. Green chilli paste 3 tablespoon
  9. Cumin seeds 1 tablespoon
  10. Bay leaf 1 pc
  11. Temarind pulp 2 tablespoon
  12. Mustered oil 100 gm
  13. Water for boiling

Instructions

  1. 1. Boil Tero leaves with salt, temarind pulp and water after proper cleaning .
  2. 2. After boiling take it in the bowl and smash Tero leaves.
  3. 3. Heat mustered oil and cumin seeds, bay leaf and red chillies.
  4. 4. When smell comes out add smashed tero leaves.
  5. 5. Stir it continuosly in high flame.
  6. 6. Heat another Kadai and add mustered oil and add Hilsa head or Elish maach matha.
  7. 7. Fry Hilsa head deeply.
  8. 8. After deep fry take it out from the flame and place it in the bowl.
  9. 9. Add cumin powder, corriander powder, green chilli paste, sugar and salt in the smashed tero leaves.
  10. 10. Continuously stir it heavily in high flame.
  11. 11. When colour of Tero leaves become change add Hilsa head and break it into pieces
  12. 12. Stir it continuosly with high flame.
  13. 13. When it becomes fry and colour becomes change, take it out from the flame.
  14. 14. It is ready to serve.
