Homemade cookies are always a hit with it's freshness and great flavor. These pistachio cookies are so easy to make and they are soft, little crisp pista and butter flavored cookies

Ingredients Serving: 7

  1. Salted soft butter 60 grams
  2. Icing sugar 80 grams
  3. All purpose flour 150 grams
  4. Egg 1
  5. Baking powder 1/4 th teaspoon
  6. Chopped pistachio 2 tablespoon
  7. Some more chopped pistachio to garnish
  8. 1/4 th tsp caraway seeds (optional)


  1. In a mixing bowl add icing sugar and soft butter. With a hand blender mix to a creamy texture.
  2. Sieve together flour and baking powder.
  3. Add chopped pistachio to the flour.
  4. Add 1 egg to the butter mixture and combine well. For vegetarian option add 2-3 tablespoon of milk in place of egg.
  5. Now add the flour mixture to the liquid and mix using your hand.
  6. Make a soft dough in light hand. Add milk if the dough is hard.
  7. Cover and keep this dough in the refrigerator to set for 20-30 minutes.
  8. After 20-30 minutes take out the dough from the refrigerator and divide the dough into 15-16 parts.
  9. Make ball like shape with each part. With your palms press these balls a little to flatten them a little.
  10. Arrange them in a baking tray . Put a little gap between the cookies.Be sure to spread a baking sheet over the tray so that you can easily transfer the cookies.
  11. Garnish these arranged cookies with some chopped pistachio.
  12. Preheat oven at 165 degree Centigrade.
  13. Bake these cookies for 12-15 minutes or till the cookies become light golden brown in color.
