ABOUT Gulab Patti Sandesh RECIPE

Traditional sweet from West Bengal made from fresh cottage cheese and fresh edible rose petals. The rose water gives it a very traditional aroma and fragrance.

Ingredients Serving: 4

  1. 1 litre Full cream milk with high fat content
  2. lemon juice or yoghurt to curdle the milk
  3. Sugar as per taste
  4. 1 tablespoon freshly cut red rose petals ( dried petals can also be used )
  5. 2 tablespoons rose water or gulaabjal
  6. edible red rose petals for presentation and consumption

Instructions

  1. Keep milk to boil and keep stirring in between so it doesn’t stick to the bottom of the pan.
  2. When it starts to boil completely add a teaspoon of lemon juice and you will see the milk curdle. If not cuddled properly add some more lemon juice slowly.
  3. Once the whey separates switch off the gas and sieve the cottage cheese on a cheese cloth or a Muslin cloth or any sieve.
  4. Wash it well under running water to avoid the taste of lemon settling in.
  5. Hang it on a height to let the excess water drain out.
  6. Do not apply pressure while squeezing the extra water from the cloth.
  7. After 15mins remove the cheese on a cooking surface or a big plate.
  8. The texture should be a bit soft and little warm.
  9. Add sugar as per taste and sprinkle some Rose water.
  10. Knead and combine the cheese and sugar with the end of your palm in one direction upwards.
  11. Knead it until smooth and the sugar is well combined.
  12. Bring them together and add rose petals. If using dried ones make sure to give it a quick churn to breakdown into smaller pieces.
  13. Make equal balls and roll into a shape of a peda.
  14. Serve it traditionally on an edible rose petal as shown in the picture.
  15. Just before serving sprinkle some rose water for taste and fragrance. Do not sprinkle too much as it might get bitter.
  16. Store in a box in the fridge for better results.
  17. Just an hour before serving remove from fridge for a melt in mouth texture.
  18. Enjoy guilt free traditional sweet:)
