ABOUT Irish Barmbrack | Irish Speckled Loaf RECIPE

Barmbrack is a traditional Irish sweetened bread baked at Halloween. It is also called speckled loaf as it is dotted with raisins. It is often called Tea Brack because of soaking the raisins and currants overnight in tea. This recipe makes a really moist fruit loaf packed with flavours from spices. Thick slices are buttered and served with tea.

Ingredients Serving: 8

  1. 1 ¾ cup brewed black tea, cold
  2. 1 cup sugar plus 1 tablespoon to sprinkle
  3. 1 cup golden raisins
  4. ½ cup black currants
  5. ¼ cup chopped candies peels or glazed cherries
  6. 1 large egg
  7. 1 ¼ cup All-Purpose Flour
  8. 1 ¼ teaspoon baking powder
  9. ¼ teaspoon salt
  10. 1 teaspoon all spice or (¼ teaspoon each of ground cloves, cinnamon, nutmeg)

Instructions

  1. In a large bowl, take tea, raisins, currants, peels and sugar. Cover and keep overnight.
  2. Grease and line one 8 inch round cake pan. Preheat oven to 180 degrees C.
  3. Whisk together last four ingredients.
  4. Add flour mix to liquid ingredients. Beat in the egg.
  5. Pour batter into the prepared pan. Sprinkle sugar evenly on the batter. Bake for 1 hour or till a toothpick inserted in the center comes out clean.
  6. Remove from the oven after 5 minutes. Cool in the rack.
  7. Cut thick slices. Butter the slices and serve with tea
