Ingredients Serving: 4

  1. For ghughni ---
  2. 250 g chana
  3. 6 med size onion paste
  4. 1" ginzer paste
  5. 1 tablespoon garlic paste
  6. 1 teaspoon red chilly powder
  7. 1 teaspoon coriander powder
  8. 1 teaspoon cumin seed powder
  9. 1/2 teaspoon black pepper powder
  10. 1 teaspoon garam masala powder
  11. 1 table spoon coriander leaves
  12. Salt to taste
  13. 2 bay leaf
  14. 4 dry red chilly
  15. 1 black cardemon , 4 green cardemon , 1" cinnamon stick , 5 cloves
  16. 1/2 teaspoon cumin seed
  17. 6 tablespoons
  18. For chura fry ----
  19. Poha as required
  20. Oil/ ghee
  21. Chopped onion and green chilly

Instructions

  1. For ghughni ---- At first, Boil the soaked chana ( overnight ) in pressure cooker
  2. When chana is cooked then keep aside
  3. In a cooker heat the oil and add cumin seed
  4. When cumin seed splutter then add all whole garam masala and bay leaf , and dry red chilly and saute
  5. Now add onion paste and stir well for 5 min
  6. Then add ginger garlic paste and again stir well
  7. Now this time add all powered masala and mix
  8. Add 1 tablespoon water and saite
  9. When oil leave the masala then add water as you want gravy and close the cooker
  10. After 10 min switch off the gas
  11. Ghughni is ready to eat garnished with coriander leaves .
  12. For chura fry ---
  13. Heat the oil in deep pan
  14. When oil is too hot then add POHA and saute till all POHA splutter well
  15. Garnishing chura fry with chopped onion and green chilly
