ABOUT Shalgam Gosht RECIPE

Shalgam gosht is a dish from Amroha(UP).Only the leaf part of the turnip(shalgam)is used in this recipe.It is mostly cooked during winters abd is very spicyP.Till date i have not met anyone from amroha who doesnt like this dish.Turnip leaves have a unique flavour which outstands this recipe.So try it out definiyely this winter.

Ingredients Serving: 4

  1. 500g mutton
  2. 1 kg shalgam leaves
  3. 250g spinach leaves(palak)
  4. 1 tblsp Garlic Paste
  5. 1 tblsp ginger paste
  6. 2 tsp haldi
  7. 2 tsp garam masala powder
  8. 1 tsp red chilli powder
  9. 1 tsp Coriander powder
  10. 10-12 chopped green chillies
  11. Salt according to taste
  12. 1 cup oil

Instructions

  1. Wash the meat and keep aside.
  2. Chop the shalgam and palak as fine as possible.
  3. In a pressure cooker add in the meat and the chopped leaves.Turn on the flame.
  4. Add in the spices,ginger and garlic paste,salt and oil.
  5. Cover the lid and cook until 2 whistles.
  6. Now open the pressure cooker.Check if the meat has tenderized.
  7. Add in the chopped green chillies and garam masala powder.
  8. Now cook stirring frequently until oil separates.
  9. Do not add water.
  10. Enjoy spicy shalgam gosht with phulkas naan or steamed rice.
