Ingredients Serving: 4

  1. Idly rice - 2 Cups
  2. Urad dal- 1/2 cup
  3. Fenugreek seeds- 1 tbsp
  4. Thick Poha or Beaten rice- 4 Tbsps
  5. Tur dal- 1/4 Cup
  6. Moong dal- 1/4 cup
  7. Turmeric powder- 1/4 tsp
  8. Small onions- 10
  9. Tomato- 1
  10. Coriander seeds- 2 Tbsps
  11. Channa dal- 1 tbsp
  12. Tur dal- 1 tsp
  13. Fenugreek seeds- 1 tbsp
  14. Cumin Seeds- 1 tsp
  15. Red chillies- 6
  16. Coconut- 4 Tbsps
  17. Mustard seeds- 1 tsp
  18. Coriander leaves
  19. curry leaves
  20. Roasted channa dal - 3 Tbsps
  21. Salt to taste

Instructions

  1. Take rice, urad dal and fenugreek seeds in 3 different vessels.
  2. Rinse well and soak in pure drinking water for 6 hours.
  3. Rinse and soak poha for about 15 minutes.
  4. Grind soaked fenugreek seeds and soaked poha in Mixie jar.
  5. Add this with soaked Urad dal and grind.
  6. Grind soaked idly rice separately.
  7. Mix all with enough salt.
  8. Next day you can see the batter has raised.
  9. Batter will be fluffy after fermentation.
  10. Grease the idly plates drop the batter in the idly moulds.
  11. Steam it for 20 minutes.Place the idly plates in the idly cooker only after the steam starts.
  12. Do not over cook.Check and take from the moulds.
  13. Pressure cook dals with turmeric powder.
  14. Dry roast Coriander seeds,Tur dal,Chenna dal,Cumin seeds,Fenugreek seeds,Kashmiri Chilly and little salt.
  15. Powder the roasted ingredients in the Mixie jar.
  16. In a saucepan heat oil and sauté mustard seeds,small onions,SAMBAR Powder,curry leaves and tomato.
  17. Add cooked dals and salt to taste.
  18. Cook well.Add 1 tsp jaggery Sambar is ready.
  19. COCONUT CHUTNEY: Grind coconut,roasted Bengal gram,ginger,green chilly,tamarind,garlic and salt. And season with mustard and curry leaves.
  20. Season with mustard,hing and curry leaves. Yummy Chutney is ready.
