Ingredients Serving: 4

  1. Tandoori boneless chicken pieces 700 grams ( My Tandoori chicken without oven recipe is already posted in BB)
  2. Butter unsalted 5 tablespoons
  3. Cloves 4
  4. Cinnamon medium 1
  5. Bay leaf 1
  6. Black cardamom 1
  7. Green cardamom 2
  8. Nutmeg powder 3/4 teaspoon
  9. Green chillies 3
  10. Ginger garlic paste 1/2 teaspoon
  11. Ginger chopped vertically 1/2 teaspoon + 1/2 teaspoon
  12. Fried onions ( used 4 big onions ) ground to paste
  13. Tomatoes ripe red 4 big grated to purée
  14. Cashew paste 4 tablespoons
  15. Kashmiri red chilly powder 1 teaspoon
  16. Paprika powder 3/4 teaspoon
  17. Tandoori masala powder 1/4 teaspoon
  18. Turmeric powder 1/2 teaspoon
  19. Fresh cream 2 tablespoons
  20. Full fat yogurt 1/4 cup
  21. Water 1 glass
  22. Salt 2 teaspoons or as required
  23. Kasuri Methi powder 1/4 teaspoon

Instructions

  1. Melt butter in a Handi .
  2. Add cloves , bay leaf , cinnamon stick , cardamoms . Fry till aroma releases.
  3. Add green chillies .
  4. Add ginger garlic paste and sauté until raw smell leaves .
  5. Pour the ground onion paste . Add 1/2 teaspoon chopped ginger. Sauté for a minute .
  6. Pour the tomato purée .
  7. Sauté well in the butter till red .
  8. Add the dry powders one by one excluding nutmeg powder .
  9. Add salt . Adjust accordingly as tandoori chicken already contains salt .
  10. Add yogurt .
  11. Add cashew paste . Mix all . Cover and cook till oil oozes from the curry .
  12. Then add crushed Kasuri Methi , tandoori chicken pieces .
  13. Cover and slow cook in low for 7 minutes till chicken pieces looks soft .
  14. Add water in between it really needed to adjust the consistency . Thick Gravy consistency is preferred .
  15. Finally add nutmeg powder . Mix .
  16. Add fresh cream . Stir till combined in low heat . Switch off .
  17. Tandoori Chicken Handi is ready .
  18. Garnish with ginger slices .
  19. Serve hot with your favorite rotis / breads .
