We can easily make beef curry using leftover vegetables and leftover coconut chutney

Ingredients Serving: 2

  1. Leftover coconut chutney
  2. Leftover vegetables flight drumstick brinjal potato
  3. Salt
  4. Sesame oil 3 tablespoon
  5. Curry leaves
  6. Mustard seeds half tablespoon
  7. Fenugreek half tablespoon
  8. Chilli powder one tablespoon
  9. Coriander powder to tablespoon
  10. Asafoetida one pinch
  11. Tamarind extract 5 tablespoon

Instructions

  1. Seed oil in a pan add mustard seeds fenugreek curry leaves and chopped vegetables
  2. Add salt chili powder coriander powder and saute it for one minute
  3. Add Tamarind extract, required water and cook for 15 minutes on low flame
  4. Add leftover coconut chutney and mix well and switch off the flame
  5. Hard Pinch of asafoetida and mix well
  6. Serve with Dosa or rice
