Ingredients Serving: 4

  1. 1/2 cup maida
  2. 1/2 tbsp ghee
  3. Water as required to knead the dough
  4. Pinch of salt
  5. For the stuffing
  6. 2 mixed dry nuts laddoos
  7. 4 - 5 kaju katli
  8. Ingredients for sugar syrup
  9. 1 cup sugar
  10. 1/2 cup water
  11. 10 - 12 saffron strands
  12. For garnishing
  13. Some finely chopped pistachios
  14. Sliver leaves
  15. Oil for deep frying

Instructions

  1. Put the dough ingredients at one place
  2. In a mixing bowl combined together maida , ghee and salt
  3. Mix them nicely until becomes crumbly
  4. It should be like this , if you hold some portion tight in your fist it should come together
  5. Then by adding water little by little knead a medium tight dough , it should neither be too soft nor too tight
  6. It should be like this
  7. Cover and keep for 15 minutes to rest
  8. In the meantime make the stuffing , take kaju katlis and dry nuts laddoos
  9. Mix them well with your fingers
  10. Make equal sized balls from the dough , it should be medium in size
  11. Start rolling out the ball into a medium thin roti
  12. Cut the roti into two portions , a semi circle shape
  13. Apply water on the straight portion and fold it like a cone
  14. Fill the stuffing nicely in the cone
  15. Apply water on the edges and seal it properly by pressing it with your fingers
  16. In this way prepare all the samosas
  17. Heat oil for deep frying , first on high flame , then make it slow , then slide the ready samosas in the hot oil
  18. Fry them , by turning them at regular intervals , until becomes light brown and crispy
  19. When done take them out in an absorbant paper
  20. Fry 2 - 3 samosas at one time
  21. Now in a patila make sugar syrup by boiling 1 cup of sugar with half cup of water along with saffron strands , until becomes one and a half string consistency
  22. Let the syrup cool down a little , it should be warm
  23. Dip the ready samosas in the warm syrup , let it remain for 2 minutes , then take them out and arrange them in a serving platter , garnish with chopped pistachios and silver leaves
  24. About 8 pieces of samosas were made with this much of quantity
