ABOUT Indian Railways Veggie ( Potato ) Cutlet with Toasted bread crumbs RECIPE

Childhood railway journeys were made even more enjoyable due to the Veg Cutlet that I used to love. Years of trials n errors and search for the perfect taste yielded result when I found it in a old-second hand book. Unfortunately, can't credit the author as I have no memory of either her or her recipe book.

Ingredients Serving: 4

  1. 3 large potatoes
  2. 1 medium sized onion
  3. 2 cup mix veggies - carrots, cabbage, cauliflower and peas
  4. Salt to taste
  5. 1/4 teaspoon garam masala powder
  6. 1/2 teaspoon red chilli powder
  7. 1/2 teaspoon haldi
  8. 1/2 teaspoon dhania powder
  9. 2-3 tablespoon whole wheat flour for binding ( Can be increased if need be )
  10. oil for shallow frying veggies
  11. oil for deep frying the cutlets or shallow frying or baking in oven
  12. For the Home toasted Bread Crumbs- 4 brown bread slices, crusts removed.

Instructions

  1. Chop all the veggies, potatoes, onion as finely as possible
  2. In a thick bottom pan, heat 2-3 tablespoon of oil and on slow flame add the onions. Cook for a couple of minutes.
  3. Add all the veggies and the potatoes and cover the pan with a lid and let cook for about 10-15 minutes till all become soft.
  4. Stir or mix them up once in a while so that they dont stick to the bottom of pan and burn.
  5. Add all dry masalas, salt and the whole wheat flour and mix well and cook for 2 minutes more so that the flour loses the raw flavor.
  6. Keep the veggies in the pan only till the mix cools down on its own. This ensures that they keep on cooking for some time in the hot pan.
  7. Remove from the pan and make small oval shaped cutlets. Dip in the home made Bread crumbs. ( Recipe given at the end for the crumbs )
  8. Shallow fry on tawa till both sides turn golden brown. ( Use Non-stick pan ) Can be deep fried too. If making in oven, then preheat the oven to 180 degrees for 10 minutes with both the rods on. Grease a baking tray
  9. Place the cutlets and cook for about 10-12 minutes till they turn golden brown. Each oven is different and hence need to eyeball it.
  10. Home Made Toasted Bread Crumbs- Preheat the oven to 150 degrees for 10 minutes with both the rods on.
  11. Remove the crusts of the bread slices. Toast in oven for 5-6 minutes. Chop them in a chopper quite thickly as we want big coarse crumbs. No need to chop or grind finely.
  12. For the cutlets, increase the chilli as per personal preference.
