Pola is a traditional Malabar dish which most of us know . Well . So what’s special in this Pola ? This Pola is made using leftover tortillas which was lying in my refrigerator . A fusion idea of fine to combine tortillas with our Desi Pola . Pola appears to be a cake . This Tortilla Pola is a savory version . This Pola also includes leftover Nepalese Chicken curry . Cool .. Both the leftovers at its best use . Finished in no time .

Tear leftover tortillas into tiny pieces .
Transfer the pieces in a wide bowl .
In another bowl , take 2 beaten eggs and milk .
Now pour this egg milk on the tortilla pieces to immerse them . Add egg milk gradually . First add till immersing point .
Once the tortillas absorb milk , add the remaining .
At the same time , don’t add excess liquid and make tortillas into a batter .
The cake batter consistency is what we are looking for .
Cover and rest the tortillas for 5 minutes .
Meantime , take the chicken pieces from the leftover chicken gravy . I used Nepalese Chicken curry . You can use any spicy leftover curry .
Shred the chicken pieces , remove bones if any from the gravy .
The curry we are using should be in a sauce consistency and not runny . Heat and reduce to sauce consistency if required .
Add the cooled shredded chicken and the thick chicken gravy to the soaked tortillas .
Add red chili powder .
Add mozzarella shredded cheese.
Spring onions chopped 1 tablespoon
Mix all together .
The consistency is cake batter consistency . Shouldn’t be scooping tight nor runny .
Heat a skillet . Choose skillet size as per the quantity of the mixture .I used a medium sized frying pan . We are preparing a cake and so shouldn’t press the mixture like dosas .
Brush the skillet with ghee . Grease ghee throughout the skillet .
Reduce the flame to very low to low .
Transfer the tortillas mixture to the skillet .
Spread the mixture evenly . Level the surface .
Cover with a lid and bake in low for 10 minutes .
When you could see the sides roasted in golden Brown colour , heat another tawa in another burner .
Brush ghee .
Tilt the first pan on the second tawa .
Pola falls beautifully . Cover and cook for another 5 minutes so that the lower side gets cooked .
Tortillas Pola is ready .
Cut the hot Pola into pieces and serve hot .
