ABOUT Leftover Appam Vegetable Curry- SouthIndian Style RECIPE

Appam is a very famous and common South Indian dish which is now enjoyed almost in every part of India. So now with the leftover appam we can give a unique twist and prepare curry and enjoy it in a complete meal which is full of proteins as many vegetables are used for it's preparation. A totally authentic south indian flavours are infused in the curry and thus a treat for all.

Ingredients Serving: 4

  1. Leftover Appam, 10 pieces
  2. Red tomatoes, 2 big, diced
  3. Onion, 1, sliced
  4. Bottle Gourd, 1/4 cup, chopped
  5. French Beans, 1/4 cup, chopped
  6. Potato, 1/4 cup, chopped
  7. Drumstick, 1, chopped
  8. Carrot, 1/4 cup, chopped
  9. Tomato puree, 1/2 cup
  10. Mustard seeds, 1tsp
  11. Curry leaves, 2 sprigs
  12. Dry red chilli, 2
  13. Turmeric powder, 1tsp
  14. Red chilli powder, 1tsp
  15. Coriander powder, 1/2tsp
  16. Salt, to taste
  17. Chipotle South West Dressing, 2tsp
  18. Oil, 2tsp

Instructions

  1. Take a non stick pan and add oil, then add mustard seeds.
  2. When mustard seeds splutters add curry leaves, dry red chillies and onions, then saute.
  3. Now add all the veggies except tomatoes and saute.
  4. Now add tomato puree, all spices i.e. turmeric powder, red chilli powder, coriander powder and salt and mix.
  5. Now add water as per desired gravy consistency and give it a boil.
  6. Simmer the flame and cover and let it cook until veggies turn soft.
  7. Uncover and mash 1 portion of the veggies.
  8. If required you can slight more water at this point and give it a boil again.
  9. Now add tomatoes and cook for 5 more minutes.
  10. Now add Chipotle South West Dressing and mix well.
  11. Curry is ready.
  12. Now add all the appam and cook for a minute.
  13. Serve hot and enjoy the delicacy.
