Another dish which is loaded with tomatoes .. Cooked almost every week in Punjabi household.

Baingan Bharta

Ingredients to make Baingan Bharta

  • Brinjals - 5-6 no.s
  • (roasted n de-skinned)
  • tomatoes 10-12 no.s
  • chopped..
  • onions - 2-3 no.s chopped
  • salt to taste
  • Red chili powder to taste
  • green chillies - 4-5 no.s chopped
  • Sabut jeera - 1 tsp
  • coriander powder - 2 tbsp
  • Refined oil - 2 tbsp.

How to make Baingan Bharta

  1. Heat oil in a wok
  2. Add sabut jeera n
  3. chopped onions..
  4. Saute till pinkish in
  5. color..
  6. Add tomatoes n mix
  7. well..
  8. Now add the dry
  9. masalas.
  10. Add the de- skinned
  11. Brinjals..
  12. Mix well .. to a semi
  13. puree consistency..
  14. Adjust salt and spices.
  15. Cook till the sides
  16. leave oil..
  17. Now add a dollop of
  18. desi ghee (optional).
  19. Serve with phulkas..

My Tip:

When you pick brinjals (baingan) , pick the very light one's...
