Ingredients Serving: 4

  1. 400grams minced Chicken
  2. 4 small-medium sized bell peppers of your choice
  3. 100 gram green peas
  4. 1 large onion sliced finely
  5. purée of 1 large/2 medium tomatoes
  6. 1 small carrot peeled and sliced thin
  7. 1 cup of hot water
  8. salt to taste
  9. 1 teaspoon turmeric powder
  10. 1.5 teaspoon red chilli powder/paprika
  11. 1 tablespoon coriander powder
  12. 1 tablespoon roasted cumin powder
  13. 1.5 teaspoon garam masala powder
  14. shredded mozzarella/cheddar cheese 400 grams
  15. 2 tablespoon olive oil

Instructions

  1. rinse the minced chicken and peppers thoroughly well and keep aside
  2. heat oil in a wok and add onions
  3. sauté until translucent and add the sliced carrots and peas
  4. sauté on Low heat for 1 minute before adding the tomato purée
  5. add the dry spices . mix and allow the mix to simmer
  6. add the minced chicken and salt. mix and simmer for 2 minutes before adding the hot water
  7. mix well. cover and cook until Chicken is done,vegetables soften and the gravy thickens
  8. turn off heat and transfer to a bowl
  9. preheat the oven to 180 degree celcius
  10. slice the peppers into halves,length wise and discard the seeds and stalk in the process
  11. place the peppers cavity side TOP on the baking tray aligned with baking paper and an aluminium foil over it
  12. now fill up the cavities of the peppers with the minced chicken
  13. TOP each with a generous amount of cheese
  14. place the tray in oven and grill for about 5 minutes
  15. take the tray off oven and allow the peppers to cool off slightly before digging in
  16. Bon Apetit!
