ABOUT Kadapa Erra Kaaram ( Red chilli Chutney) RECIPE

Kadapa , heart of Rayalaseema, located in Andhra Pradesh is known for its extremely spicy recipes . This Erra Kaaram is one traditional , common food among the natives . Finest , Spiciest , Red chillies are ground in a traditional method along with few ingredients . The natives love to consume it just raw as they are used to it . In my recipe , I have done little sautéing to put down the rawness of the chutney . Anyways , this step is purely optional .

Ingredients Serving: 4

  1. Dried red chillies fistful or 15
  2. Salt 1 teaspoon or as preferred
  3. Shallots 10
  4. Tomato red large 1 roughly chopped
  5. Garlic pods 5
  6. Hing a small pinch ( optional )
  7. Sesame oil 4 tablespoons
  8. Mustard seeds 1/2 teaspoon
  9. Water 2 tablespoons

Instructions

  1. Firstly take red chillies , garlic , salt , roughly chopped tomato in a blender .
  2. Grind to a tight smooth paste . Add very very little water if really hard to grind . If grinding using traditional method without blender don’t add even a drop of water .
  3. You can consume the raw ground paste as it is . That’s how it is served in Kadapa.
  4. If not , heat sesame oil in a pan .
  5. Add and splutter mustard seeds .
  6. Add a pinch of hing .
  7. Add in the ground red chilli paste .
  8. Sauté the mixture in the oil for 3 minutes in medium heat .
  9. Switch off .
  10. Kadapa Erra Kaaram / Red Chilli Chutney is ready .
  11. Serve with idli / dosa / rice .
  12. This chutney stays fresh for a week time if there is no moisture left .
