These spicy tomato bhajiyas are a famous dish from an area called Dumas beach in Surat.Tomatoes layered with spicy green chilly paste is dipped in gram flour paste and fried.

Ingredients Serving: 2

  1. Tomatoes 2
  2. Green chillies 4
  3. Corriander 1/2 cup
  4. Ginger 1/2 inch
  5. Salt to taste
  6. Gram flour 1 cup
  7. Turmeric 1/2 tsp
  8. Salt 1 tsp
  9. Asafetida 1/4 tsp
  10. Cooking soda 1 pinch
  11. Hot Oil 2 tbsp
  12. Oil for frying

Instructions

  1. First chop coriander,green chillies and ginger.Put in a mixer pot.
  2. Make a thick paste without adding water.
  3. Wash and cut tomatoes into thick roundels.
  4. Apply green chilli paste on the tomatoes.
  5. In a mixing bowl take gram flour,salt,turmeric ,soda, asafetida and add water little by little and make a medium paste.
  6. Keep the oil for frying on gas.When this oil is hot take 2 spoons of oil and add to the gram flour batter and whisk.
  7. Now take a slice of tomatoes and keep in the batter.Pour the batter with a spoon on the chutney side.
  8. Then with a spoon lift it and put it in oil.
  9. Similarly put more tomato slices and fry on medium flame till the fritters turn golden on both sides.
  10. Serve with chutney,ketchup or kadhi as is served in Dumas.
