Ingredients Serving: 4

  1. Basmati rice 3 cups washed and soaked for 15 minutes .
  2. Ghee 3 tablespoons
  3. Cooking oil 3 tablespoons
  4. Cloves 7
  5. Nutmeg 1/2 teaspoon
  6. Bay leaves 3
  7. Cinnamon powder a big pinch
  8. Onion 1 big sized thinly sliced
  9. Tomatoes ripe big sized 3 finely chopped
  10. Salt 3 teaspoons or as required
  11. Smoked Paprika powder 2 +3/4 teaspoons
  12. Garlic crushed 2 tablespoons
  13. Chicken broth 3 cups
  14. Mushrooms 200 grams diced
  15. cumin powder 1/4 teaspoon
  16. Mint leaves fistful
  17. Cilantros as preferred chopped

Instructions

  1. In a wok / pan , heat 2 tablespoons ghee .
  2. Add the cooking oil .
  3. In low heat , add the bay leaves , cloves and crushed nutmeg .
  4. Add in the finely crushed garlic and sauté until aroma fills the place . Don’t turn the garlic brown.
  5. Add the onions and sauté until crunchy . A stage after pink but not brown . While sautéing onions add a teaspoon salt .
  6. Add the finely chopped tomatoes and sauté until tomatoes turn mushy , glossy , saucy .
  7. Add the smoked paprika powder .
  8. Add cumin powder .
  9. Mix all the ingredients by stirring masala in oil for couple of minutes .
  10. Add in the mushrooms .
  11. Toss and cook for 2 minutes .
  12. Add in the measured chicken broth .
  13. Add remaining salt . Mix all until salt dissolves completely .
  14. When the liquid bubbles out , add in the totally drained basmati rice .
  15. Add the remaining ghee .
  16. Mix gently .
  17. Sprinkle mint leaves . Using mint leaves is optional . I add as I like that minty flavour.
  18. Sprinkle few chopped coriander leaves .
  19. Seal . Cover the pan tightly and cook in low to medium flame for 10 to 12 minutes
  20. Once done , fluff the pilaff immediately with a fork .
  21. Turkish Paprika Tomato Mushroom Pilaff is ready .
  22. Serve hot with Laban .
