Pepper Chicken Stew

Ingredients to make Pepper Chicken Stew

  • 500 gram chicken thighs
  • 1 tablespoons flour
  • 2 tablespoons extra virgin olive oil
  • 3 cloves of garlic, minced
  • 1 onion,diced
  • 1 red bell pepper,cut into squares
  • 1 yellow bell pepper,cut into squares
  • 1/2 green bell pepper,cut into squares
  • 1 tablespoon sweet paprika
  • 1 teaspoon soya sauce
  • 400 grams stewed tomatoes,pureed
  • 2 tablespoons tomato paste
  • 1/2 teaspoon black pepper powder
  • 1/2 teaspoon salt
  • 2-3 finely chopped spring onion, for garnish

How to make Pepper Chicken Stew

  1. 1. Generously salt and pepper the thighs and then dust with the flour.
  2. 2. Heat a kadai over medium high heat until hot and then add the olive oil. Swirl to coat and then add the chicken. Fry on one side until brown and then flip. Brown the second side and then transfer the chicken to a bowl.
  3. 3. Add the garlic and onion and saute until tender and starting to brown.
  4. 4. Add the bell peppers and continue sauteing until the peppers are bright in colour and beginning to soften.
  5. 5. Add the sweet paprika and saute until very fragrant.
  6. 6. Return the chicken to the pan along with the stewed tomatoes,salt,soya sauce, black pepper powder and tomato paste.
  7. 7. Simmer for 10-15 minutes or until the chicken is cooked through and the bell peppers are tender.
  8. 8. Garnish with finely chopped spring onion.
  9. 9. Pepper Chicken Stew is ready to serve.

My Tip:

Extra virgin olive oil can be substituted with refined oil.
