Ingredients Serving: 2

  1. All purpose flour 4 cups
  2. Active yeast 1pkt
  3. sugar 1tsp
  4. Salt 1 tblspoon
  5. Warm water 2 cups
  6. Olive oil 3/4 cup
  7. Fresh thyme, rosemary
  8. Garlic powder
  9. Sundried tomatoes
  10. Half onion sliced

Instructions

  1. Add yeast in a bowl and add salt, sugar and 1 cup warm water
  2. Let it sit for couple of minutes. If the mixture becomes frothy, the yeast is good and can be used. Else throw this and use a new packet. Test it the same way
  3. Add flour, the yeast mix, remaining 1 cup warm water and 1/4 cup olive oil in a stand mixer and use the dough hook to knead the dough for few mins until it forms ball
  4. Scrape the sides of the mixing bowl, form a neat ball of dough with hands without much kneading
  5. Cover the dough/bowl and keep it in a dark ,warm place to let it rise.
  6. Since i didnt had much time on hand to let the dough sit for 5-6 hours as the most recipes suggest, i heated my oven to 200 deg F and kept the bowl with the dough in it for an hour. The dough was well risen after an hour
  7. Once the dough has risen to its double, flour the surface and put the dough on the work surface and divide this in 2 equal parts
  8. I used round 9 inch pans, you can use 1 big cookie sheet and use the whole dough to create 1 big rectangular batch.
  9. Line the pan with parchment paper. Grease it with olive oil or butter and spread the dough in it by pressing and stretching
  10. Keep the pan for second proofing in dark, warm place. This time it will be quick. I kept it for 30 mins
  11. After 30 mins you will see some rise in the dough, at this moment pre heat the oven to 425 deg F
  12. Oil your fingers and punch in the dough to make holes all over. Pour the remaining olive oil on top of the dough, filling the holes made by fingers
  13. Sprinkle black pepper, salt, fresh chopped herbs,,onions and sun dried tomatoes
  14. Bake the bread for 25-30mins
  15. Let it cool for 2 mins and enjoy warm witg butter or olive oil
  16. This can be enjoyed as a side diah with soups or pasta
