Pitha is a very famous name for all odia people. There are lots of variety in pitha and those are soul of odia cuisine. Pithas are very important role in odia occasion also. Sijha manda is always my favourite pitha . It's a steamed rice flour balls with variety of stuffing. Usually it's prepare with coconut jaggery stuffing and some dal stuffing also. Some times my mother make with cauliflower and potato stuffing but i thought to make with my favourite mushrooms stuffing and also thought to present in a different way. I had only an idea to combine with some sauce or chutney so i thought why not with our very own tomato chakata. Tomato chakata is an amazing side dish which is prepared every odia household. Its a simple roasted tomato salsa with onion,garlic,green chilli and mustard oil which can be beat any type of international salsa. So i thought to combine this with the stuffed rice dumplings. And the results is amazing. I also want to say that our odia dishes are very healthy and tasty only we need to present them properly.... Thank you.

Ingredients Serving: 5

  1. For dough-
  2. 1 cup rice flour.
  3. 1 &1/2 cups water.
  4. 1 teaspoon butter.
  5. Salt to taste.
  6. FOR STUFFING-
  7. 250 grams mushrooms,sliced.
  8. 2 teaspoon butter.
  9. 5 garlic cloves, finely chopped.
  10. 1 onion,finely chopped.
  11. 1 Greene chilli,finely chopped.
  12. Salt and pepper to taste.
  13. For Salsa-
  14. 4 medium size tomatoes.
  15. 1 onion ,finely chopped.
  16. 2garlic cloves,finely chopped.
  17. 1 green chilli,finely chopped.
  18. 2 teaspoon mustard oil.
  19. Some chopped Coriander leaves
  20. Salt to taste.

Instructions

  1. Boil water in a pan,add butter and salt.
  2. Once the water started boiling reduce the heat and add the rice flour gradually. Quickly stir and mix the floor.
  3. Stir continuesly to avoid the lumps.
  4. Keep stirring the mixture in low heat,until it forms into a dough.
  5. Turn off the gas and cover the dough for 10 minutes.
  6. In the mean time melt butter in a pan add garlic saute until fragrant.
  7. Add green chilli and chopped onions and saute again.
  8. Add mushrooms and cook until soft.
  9. Add salt and pepper,mix well.
  10. Turn off the gas and set it aside.
  11. Apply water on your palm and knead the dough.
  12. Now take a small size dough,make a dent in the center put required amounts of filling in it close the opening and make it like a ball.
  13. I have prepared 10 balls out of this.
  14. Now heat water in a steamer/idli cooker and steam the balls for 10 to 15 minutes.
  15. In the mean time roast the tomatoes on gas stoves/oven.
  16. Set the roasted tomatoes aside to cool.
  17. Put the roasted tomatoes in to a bowl and mash them.
  18. Add onions,garlic,green chilli,coriander leaves,mustard oil,salt and mix them properly.
  19. Now the salsa is ready.
  20. Serve the mushrooms stuffed rice flour balls with roasted tomato salsa.
