ABOUT Malpua With Oats Rabri RECIPE

Malpua is a sweet pancake popular in North Indiain States like Uttar Pradesh, Rajasthan, Bihar, Delhi. However each region has a different version of making these. Apart from flour different ingredients like fruit milk Khoya and even coconut are used in some variations. Malpuas are traditionally made in many bones during festivals like Holi Navaratri and Diwali. Malpua can be eaten on their own as they are dunked in sugar syrap. They are also served with rabri. So I have made different version of rabri that is Oats Rabri. I have made Malpua from Mava. Combination of sweet Malpua with oats rabri is yummylicious.

Ingredients Serving: 4

  1. A) For malpua
  2. 1.1/4 cup all purpose flour
  3. 1/2 tsp green cardamom powder
  4. 1 tsp fennel
  5. 1.1/2 cup milk
  6. 4 tbsp ghee
  7. 3 tbsp Mava
  8. B) For sugar syrap
  9. 1/2 cup Sugar
  10. 1/2 cup Sugar
  11. Water as require
  12. C) For Oats rabri
  13. 1 ltr Milk
  14. 100 gms sugar
  15. 100 gms oats
  16. 2 tbsp almond and Pistachio flackes
  17. 1/2 tsp cardamom powder

Instructions

  1. First take a mixing bowl.    
  2. Pour Milk into it.
  3. Add Mawa into milk and mix it well.
  4. Now and all purpose flour, fennel seeds and cardamom powder.    
  5. Mix all the ingredients well.    
  6. Make sure there will be no lumps.    
  7. You can use more milk as needed to make a batter that is not to think or not to runny.    
  8. Batter should be of flowing consistency.    
  9. By Adjusting the consistency of batter you can make thick or thin malpuas as per your liking.    
  10. Here I am preparing fluffy Malpua so that I have beat the better for few minutes with the whisk.
  11. Keep the batter aside for 3-4 hours.  
  12. After 4 hours, take a pot.
  13. Add sugar and water into it.    
  14. Add the water that covers the sugar.    
  15. Dissolve the sugar on a medium flame.    
  16. While the sugar syrup until it turns sticky or riches a one string consistency.    
  17. In another pot bring 3 to 4 cups of water to a boil.         
  18. After that turn off the flame.
  19. Now place to sugar syrup pot in the hot water pot.    
  20. This helps to prevent crystals in sugar syrup.  
  21. Now for making Malpua heat ghee for frying it.
  22. When the ghee is hot, pour the batter.  
  23. The batter spread depending on the consistency.        
  24. You can add more milk at this stage to thin down the batter to make thin Malpua.
  25. You can also spread the batter using spoon.    
  26. Fry until golden brown.    
  27. Flip and fry on the other side.    
  28. Let them turn fluffy.  
  29. Now remove them from the pan and add directly to the syrup. 
  30. Give a quick stir to the sugar syrup before adding the Malpua if the sugar crystallized and add 2 tbsp of water and heat it.
  31. You can allow them to soak in the syrup for 10 to 15 minutes. 
  32. Meanwhile Take a large pot and add full fat milk into it.
  33. Bring it to a boil.
  34. Stir it at regular intervals and in one direction.
  35. Boil until milk turns into a half consistency.
  36. Keep moving the Malai which forms on top towards the sides.    
  37. Add sugar into it.
  38. Add cardamom powder, almond and Pistachio flackes.      
  39. Mix it well.    
  40. Now take a mixture jar and add the oats into it.
  41. Grind oats into a powder.        
  42. Add the oats powder to the reduced milk.  
  43. Stir it and simmer it for 5-7 minutes.
  44. Now turn off the flame.    
  45. Let rabri cool completely.    
  46. After that refrigerate it for half hour.
  47. In a serving plate, place the Malpua.
  48. Pour some Rabri on it using a spoon.
  49. Sprinkle some dry fruits.
  50. Malpua with oats rabri is ready to be serve.
