ABOUT Carrot Spice Milk/ Carrot Kheer RECIPE

Carrot Milk spiced using cardamom and nutmeg powder. Nutmeg is the spice known to keep warm from within thus very good in winters. You can enjoy the drink in summers too but avoid nutmeg. It is good for babies above 1 year of age, my 15 month old loves it.

Ingredients Serving: 2

  1. Chopped Carrots - 1 Cup
  2. Overnight soaked Almonds(skin peeled) - 6
  3. Cashews - 6
  4. cardamom - 1 pod
  5. Add any dry fruits of your choice - Pistachios and raisins works well
  6. Water - 1/2 cup
  7. Sugar - 2 tbsp (you can replace it with jaggery or honey)
  8. Milk - 2 cups
  9. Nutmeg powder - 1/4 tsp

Instructions

  1. Pressure cook carrots, dryfruits, water and cardamom for 1 whistle.
  2. Once cooled down grind to form a paste
  3. Boil Milk, mix the blended ingredients and stir.
  4. Add sweetner and nutmeg powder, wait for one boil.
