Ingredients Serving: 4

  1. Maida - 2 katoris
  2. Palak leaves - 10 (washed and cut)
  3. Ginger- 1/2 inch piece
  4. Garlic - 2 cloves
  5. Green chilly - 1
  6. Ajwain - 1 tspn
  7. Salt to taste
  8. Hot oil - 4 tspns
  9. Water to knead as per requirement
  10. Oil for Deep frying

  12. For the paneer and vegetable salad
  13. paneer - 100 gms cut into small cubes
  14. Sweet corn boiled - 1/4 cup
  15. Onion - 1 Finely Chopped
  16. Tomato- 1/2 finely chopped
  17. Capsicum- 1/2 finely chopped
  18. Black pepper powder- 1/4 tspn
  19. Salt to taste
  20. Red chilly powder- as per taste
  21. Lemon - a few drops
  22. Coriander leaves for garnish

Instructions

  1. Wash the palak leaves ,then grind the leaves with ginger,green chilly and garlic
  2. Now in a bowl put the maidan,salt and ajwain...pour the hot oil and mix with hands ....It will form a crumbly texture...
  3. Add water and knead the flour to form a dough ....Keep it aside for half an hour.
  4. Now grease a katori / steel bowl and keep it aside
  5. Now after half an hour knead the dough for a minute...Take a small ball and roll it to form a circle shaped roti...
  6. Then prick with a fork all over the roti... This is to prevent it from puffing up....
  7. Place the steel bowl in the center....And stick the rolled dough over it from all sides....
  8. Keep the oil to fry for heating ...Once it is hot...Put the wrapped katori in it....
  9. Deep fry the wrapped katori on low to medium flame .... From one side....
  10. Once it starts getting brown ....Remove it carefully...
  11. Leave it to cool...Then slowly remove the steel bowl from it and again deep fry the palak katori so that it gets cooked from the inner part also.
  12. Remove when done on an absorbent paper....Later you can cut the edges of the bowl to give a proper shape....
  13. Here is a collage of the steps taken in the making of the palak katori
  14. Now for the paneer and vegetable salad
  15. Take a bowl and mix all the ingredients...Put seasoning only before serving....
  16. Now put this in the fried palak bowl and.... garnish with a lemon slice and coriander leaves.... Your Palak salad bowl is ready to serve.
