Mixed vegetable oats rava khichdi

ABOUT Mixed vegetable oats rava khichdi RECIPE

A simple khichdi that is made with oats and rava and loaded with lots of vegetables.

Ingredients Serving: 3

  1. Rava or Semolina - 1/2 cup
  2. Oats - 1/2 cup
  3. Mixed vegetables (carrots, peas, capsicum, beans) - 1/2 cup
  4. Onion - 1 medium sized - thinly sliced
  5. Tomato - 1 , finely chopped
  6. Green chilli - 2 , finely chopped
  7. Ginger - finely chopped - 2 tsp
  8. Curry leaves - 5-6
  9. Mustard seeds - 1tsp
  10. turmeric powder - 1tsp
  11. Rock salt - to taste
  12. Oil - for tempering
  13. Ghee - 1tbsp
  14. Water - 2 cups for 1 cup of (oats+rava)

Instructions

  1. In a pan, heat the oil and add the mustard seeds.
  2. Once the mustard seeds begin to crackle, add the ginger, green chillies and curry leaves.
  3. Add the sliced onions, turmeric powder and saute for a minute or two.
  4. Add the tomatoes and other vegetables and saute for a good 3-4 minutes.
  5. Add the water, salt and bring it to a boil.
  6. Once the water starts bubbling, add the oats+rava mixture while constantly stirring.
  7. Add the ghee and mix well. Cover the pan with a lid and leave it on a low flame until the rava is cooked.
  8. Mix well and serve hot with coconut chutney.
