Cheesy corn croquettes

Ingredients to make Cheesy corn croquettes

  • Boiled potatoes -2 medium size
  • corn boiled -1/2cup
  • Bread crumbs- 4-5 tbsp or as needed
  • Mozzarella cheese cut into 8-10 sticks of 1"size
  • salt to taste
  • chilli flakes -2tsp or as per taste
  • Oregano -1/2tsp
  • cornflour slurry as needed
  • oil for frying
  • Ketchup for serving

How to make Cheesy corn croquettes

  1. In a mixing bowl add potatoes corn bread crumbs salt and other seasoning mix well, add bread crumbs depending on the moisture.
  2. Cut mozzarella into 1" sticks
  3. Prepare cornflour slurry in a bowl (1 tbsp cornflour and 1/2cup of water) mix well
  4. Geat oil in deep pan for frying the croquettes.
  5. Make 8-10 even size balls of the potatoes mixture. Flatten it on palm place the cheese stick cover it well, do the same with all dip these croquets un cornflour slurry and roll then in bread crumbs again dip in slurry and roll in crumbs.
  6. Deep fry till nice golden brown.
  7. Serve hot with ketchup.

My Tip:

You may add other vegetables like capsicum peas etc.Serve hot for the best cheesy feel.
