Ingredients Serving: 4

  1. 100 gms cheese spread -I used Amul Spicy Garlic or use plain cheese spread and add 1 tsp chopped garlic
  2. 1 tsp butter
  3. 1 tsp plain flour
  4. 1 small onion chopped fine
  5. 1 tsp pao bhaji masala
  6. 1/2 cup full fat milk
  7. Salt to taste
  8. Finger snacks or crudites like carrots stick, fried lotus stems, french fries, bread chunks ,crackers etc

Instructions

  1. Heat the butter in a small sauce pan. Saute the onions. If you're using plain cheese spread, add the chopped garlic and saute over low heat.
  2. We're not aiming to caramelise the onion, just soften it. Once the onion and garlic are soft and pink add the flour or maida.
  3. Cook stirring continuously to cook the raw smell out of the flour. Once the flour is cooked and leaves some butter add the pao bhaji masala and stir.
  4. Pour milk and keep stirring. You dont want lumps to form. Keep stirring till the sauce is smooth, glossy and boiling .
  5. Mix in the cheese spread on low heat. Adjust the salt to taste.
  6. Cool and pour in fondue pot to serve. Keep an eye on the pot. If the sauce boils for too long because of the candle under, your sauce will burn. So the candle is just there to keep the fondue sauce warm.
  7. Slice lotus stem on slant and deep fry. French fries, blanched carrots, blanched beans, broccoli, crackers, apple slices, olives.. whatever you want to serve with your fondue.
  8. Serve in fondue pot with accompaniments.
