ABOUT Thepla Quesadilla RECIPE

Thepla is a popular Gujarati dish , and Quesadilla is originated in Mexico, This recipe by me is an innovation where we can enjoy both Indian and continental flavour but still they don't overshoot each another.

Ingredients Serving: 3

  1. For thepla:
  2. 1/2 cup gramflour or besan
  3. 3/4 cup whole wheat flour
  4. 1/2 cup chopped fenugreek leaves
  5. 2 tbsp chopped coriander leaves
  6. 1 tbsp finely chopped green chillies
  7. 1 tbsp finely chopped ginger
  8. 1/4 tsp turmeric powder
  9. 1/4 tsp cumin powder
  10. 1/4 tsp coriander powder
  11. Salt to taste
  12. 4 tbsp curd
  13. 1 tbsp oil
  14. 2 tbsp oil ,for frying
  15. For stuffing:
  16. 1 tbsp oil
  17. 1 tsp chopped garlic
  18. 1 tbsp chopped onion
  19. 2 tbsp chopped green capsicum
  20. 2 tbsp chopped red capsicum
  21. 2 tbsp chopped carrot
  22. 2 tbsp chopped french beans
  23. 2 tbsp corn kernels
  24. 1/2 cup Chopped tomatoes
  25. 1/2 cup boiled red kidney beans
  26. Salt to taste
  27. 1/2 tsp red chilli powder
  28. 1/2 tsp chilli flakes
  29. 1/2 tsp Paprika powder
  30. 1/2 tsp Cumin powder
  31. 2 tbsp tomato ketchup
  32. 50 grams cottage cheese, grated
  33. 2 tbsp chopped fresh parsley
  34. 50 grams mozzarella cheese
  35. 4-5 tbsp butter ,for frying Quesadillas

Instructions

  1. For thepla; in a large bowl take whole wheat flour, gramflour, chopped Fenugreek leaves, chopped coriander leaves, chopped green chillies, chopped ginger, turmeric powder, cumin powder, coriander powder,curd, salt,oil,mix it well .
  2. Now add water little by little (as required),knead into a semi-soft dough, cover and rest it for 10 minutes.
  3. Divide the dough into small equal portions,roll out into thin discs;heat tawa, brush it with little oil and roast theplas from both sides one by one.
  4. For stuffing;in a non-stick pan heat oil, add chopped garlic, chopped onion saute it for a while,then add all the vegetables,red kidney beans and cook it for 4-5 minutes.
  5. Add red chilli powder,chilli flakes,paprika powder,cumin powder,salt,tomato ketchup and fry it for couple of minutes,then add 1/2 cup water , cover and cook it for 4-5 minutes.
  6. Now add grated cottage cheese , cook it till the mixture dries.
  7. Now put off the flame,add chopped parsley leaves.
  8. To prepare a Quesadilla,take a thepla spread some grated cheese ,then spread 3-4 tbsp stuffing on it .
  9. Again spread grated cheese over the stuffing.
  10. Now cover it with another thepla.
  11. Heat non-stick pan ,add butter,place Quesadilla carefully on pan ,fry it till it turns crisp and golden brown in colour.
  12. Cut into wedges.
  13. Serve hot.
