About Thepla Quesadilla Recipe

Thepla is a popular Gujarati dish , and Quesadilla is originated in Mexico, This recipe by me is an innovation where we can enjoy both Indian and continental flavour but still they don't overshoot each another.

Thepla Quesadilla

Ingredients to make Thepla Quesadilla

  • For thepla:
  • 1/2 cup gramflour or besan
  • 3/4 cup whole wheat flour
  • 1/2 cup chopped fenugreek leaves
  • 2 tbsp chopped coriander leaves
  • 1 tbsp finely chopped green chillies
  • 1 tbsp finely chopped ginger
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin powder
  • 1/4 tsp coriander powder
  • salt to taste
  • 4 tbsp curd
  • 1 tbsp oil
  • 2 tbsp oil ,for frying
  • For stuffing:
  • 1 tbsp oil
  • 1 tsp chopped garlic
  • 1 tbsp chopped onion
  • 2 tbsp chopped green capsicum
  • 2 tbsp chopped red capsicum
  • 2 tbsp chopped carrot
  • 2 tbsp chopped french beans
  • 2 tbsp corn kernels
  • 1/2 cup Chopped tomatoes
  • 1/2 cup boiled red kidney beans
  • salt to taste
  • 1/2 tsp red chilli powder
  • 1/2 tsp chilli flakes
  • 1/2 tsp Paprika powder
  • 1/2 tsp cumin powder
  • 2 tbsp tomato ketchup
  • 50 grams cottage cheese, grated
  • 2 tbsp chopped fresh parsley
  • 50 grams mozzarella cheese
  • 4-5 tbsp butter ,for frying Quesadillas

How to make Thepla Quesadilla

  1. For thepla; in a large bowl take whole wheat flour, gramflour, chopped Fenugreek leaves, chopped coriander leaves, chopped green chillies, chopped ginger, turmeric powder, cumin powder, coriander powder,curd, salt,oil,mix it well .
  2. Now add water little by little (as required),knead into a semi-soft dough, cover and rest it for 10 minutes.
  3. Divide the dough into small equal portions,roll out into thin discs;heat tawa, brush it with little oil and roast theplas from both sides one by one.
  4. For stuffing;in a non-stick pan heat oil, add chopped garlic, chopped onion saute it for a while,then add all the vegetables,red kidney beans and cook it for 4-5 minutes.
  5. Add red chilli powder,chilli flakes,paprika powder,cumin powder,salt,tomato ketchup and fry it for couple of minutes,then add 1/2 cup water , cover and cook it for 4-5 minutes.
  6. Now add grated cottage cheese , cook it till the mixture dries.
  7. Now put off the flame,add chopped parsley leaves.
  8. To prepare a Quesadilla,take a thepla spread some grated cheese ,then spread 3-4 tbsp stuffing on it .
  9. Again spread grated cheese over the stuffing.
  10. Now cover it with another thepla.
  11. Heat non-stick pan ,add butter,place Quesadilla carefully on pan ,fry it till it turns crisp and golden brown in colour.
  12. Cut into wedges.
  13. Serve hot.
