ABOUT Carrots halwa Pie with Oat Mix nuts crust RECIPE

Carrot Halwa Pie with mix nuts and oats Crust is a quick innovative Indian fusion recipe, that consists of mix nuts  and oat flour pie crust that makes it an excellent  crust with a rich flavor and high nutritional value. The Indian carrot halwa also has fusion. I have added White chocolate  making it delicious and  yummy !!

Ingredients Serving: 4

  1. For the crust : 1 cup mix dry fruits  (Almonds, walnuts,cashews and pistachios 
  2. 1/2 cup oat
  3. 1/4 tsp sea salt
  4. 1/4 tsp green cardmoms Powder
  5. 2 tbsp butter slightly melted
  6. 1drop Orange food colour
  7. 1 drop green food  colour
  8. For the Filling :
  9. 2 cups full packed grated carrot
  10. 2 cups milk (full fat or skim)
  11. 1/2 cup melted white chocolate
  12. 2 tbsp desi ghee (clarified butter) or unsalted butter
  13. 8 green cardamom pods (peeled and crushed
  14. 1/4 cup chopped toasted cashews
  15. 1/4 cup raisins
  16. 5 tbsp fine granulated sugar ( adjust as per taste)

Instructions

  1. For the Mix dry fruits  and Oat Crust Pie : Preheat the oven at 180  degrees C
  2. Add all the all mix dry fruits  along with raisins, oat ,ground cinnamon, sea salt and butter in the food processor and blend until coarse.
  3. Line the bottom of the spring form pan with parchment paper. Grease it with butter and press the mix dry fruits mixture into the bottom of the spring form pan. Blind bake the crust in the oven at 180 degrees C for 7/8 minutes
  4. For the Indian Carrot Halwa : Boil the milk in a saucepan, add the green cardmoms powder and let it simmer till the milk reduces to half.
  5. Heat the ghee in a non-stick pan and saute the carrots for 10/12 minutes so that it loses all its moisture.
  6. Add the milk into the pan and let it simmer on low-medium flame till all the milk evaporates.
  7. Now add the sugar, cardamom powder and Stir and mix.
  8. Let the liquid evaporate. Turn off the gas than add melted white milk chocolate mix well and garnish the carrot halwa with cashews.
  9. Take out the oat and mixed dry fruits  crust pie from the fridge and add the carrot halwa filling into the crust. Spread it evenly by using a spatula. Than covered with dry fruits and  oat crust dough adding (orange and green colour   shape  up ŕose flower and green leaves optional )
  10. Put the pie in refrigerator for atleast 2 hours. Remove the Carrot Halwa Pie with oat and dry fruits  Crust, from the fridge. Use a butter knife and run around the edge of the spring form pan to loosen the pie. Remove the spring form pan
  11. Using a knife, cut a slice of the pie and serve it with a topping of melted  White Chocolate or ice cream. Plating and Gurnishing with powdered sugar  (optional ).
