Ingredients Serving: 4

  1. Arbi/kochu/Taro 1/2 kg
  2. Fenugreek seeds half teaspoon
  3. Salt half teaspoon
  4. Water for boiling
  5. Powder spices for tandoori masala Arbi-
  6. Turmeric powder half teaspoon
  7. Chilli powder half teaspoon
  8. Chat masala 1 teaspoon
  9. Cuminpowder half teaspoon
  10. Tandoori Masala 1 tablespoon
  11. Other ingredients-
  12. Green chillies 2 to 3 numbers
  13. Oil 2 tbsp
  14. Butter 2 tbsp
  15. Asafoetida 2 pinch
  16. Ginger garlic paste one teaspoon
  17. Salt to taste
  18. Ingredients for curd and chickpea batter
  19. Red chilli powder half teaspoon
  20. Turmeric powder one fourth teaspoon
  21. Salt to taste
  22. Curd 1 cup
  23. Chickpea flour/ besan 3 tablespoon
  24. Finely chopped Coriander leaves
  25. Ingredients for Tadka-
  26. Oil/ghee 1 teaspoon
  27. Pinch of Hing/ asafoetida
  28. Small Mustard seeds one teaspoon
  29. Whole dry Red Chillies two numbers

Instructions

  1. Rins Arbi(Taro/Colocosia)under running water thoroughly
  2. Take a cooker place in Arbi ,1/2tsp fenugreak seeds, 1/2tsp salt then add enough water to boil Arbi
  3. Boil until 2 to 3 whistles comes up in high to medium flame
  4. Let the steam settle down on its own,open the lid and takeout all the Arbi with the help of spoon.
  5. Dip Arbi in normal water for further cooling ,after 10 minutes take out and peel out the skin with the help of fingers.
  6. Cut them horizontally into 2 if they r big in size
  7. Heat oil and Butter in a kadai add in 2 pinch asafoetida...
  8. Add in all the boiled Arbi and fry on high to medium flame for 4 to 5 minutes
  9. Now add in 1 tsp ginger garlic paste, 1/2tsp turmeric powder, 1/2tsp red chilli powder Salt to taste 2 to 3 green chillies cut into two pieces...1/2tsp cumin powder
  10. Add in 1tbsp tandoori masala powder ,1/2tsp chaat masala fry for 4 to 5 mins
  11. Tandoori masala Arbi pan fry is ready
  12. Take a deep bowl add in 1 cup chilled curd ,3 tbsp chickpea flour, salt to taste, 1/2tsp turmeric powder 1/2tsp red chilli powder and whisk nicely
  13. now add 1 cup water to it and again whisk nicely with a whisker
  14. Now add curd and chick pea flour mixture over pan fried Tandoori masala arbi
  15. Cook on medium flame for 5 to 6 minutes switch off the flame.
  16. Take a small Pan add in 1 tsp ghee, let it smoky hot switch off the flame add in 1 tsp mustard seeds ,2 whole red chilli allow it to splutter
  17. Pour this ready tadka over ready Tandoori Masala Arbi Kadhi
  18. garnish with coriander leaves Serve hot with rice and butternaan or chapati
