ABOUT Bread Quatlama RECIPE

This is a traditional breakfast in the Middle East, Pakistan and a few places in India as well. It can be made with or without using eggs

Ingredients Serving: 6

  1. 2 cups plain/all purpose flour
  2. Salt to season
  3. 1 teaspoon fine sugar
  4. as needed Oil
  5. 2 eggs
  6. Milk to knead dough
  7. 1/2 cup gram flour/besan
  8. 1 teaspoon red chilli powder
  9. 1 large green chilli chopped finely/1 teaspoon chilli flakes
  10. 1 teaspoon nigella seeds
  11. 1 teaspoon cumin seeds
  12. 1 teaspoon coriander seeds
  13. 2 drops yellow food colour/ a pinch of turmeric
  14. water as needed

Instructions

  1. Add the plain flour, 1 teaspoon salt and sugar in a mixing bowl
  2. Mix well and knead a stiff dough using the required amount of milk
  3. Tuck the dough into a ball and apply some oil over it
  4. Place it in the mixing bowl covered for 20 minutes
  5. beat the eggs in a bowl in the meantime
  6. add the gram flour to the eggs
  7. Add the red chilli powder and a pinch of salt
  8. Add the food colour or turmeric now and mix well
  9. Place the seeds and chillies mixed in a small bowl
  10. Now post resting, set enough oil for deep frying in a wok
  11. Divide the dough into equal parts(makes 6-7)
  12. Roll out each potion using some flour in the process
  13. Apply a tablespoon (or more if needed)of the gram flour-eggs slurry over one side covering it well
  14. Take a pinch of mixed seeds and chillies and sprinkle on top
  15. Gently press down the seeds and chillies with a spoon so that they stick well
  16. Prepare all the Quatlamas similarly and deep fry each till both sides puff up while frying
  17. Enjoy while warm with your choice of sauces/ chutnies/ pickles
