ABOUT Katlama RECIPE

It is a Pakistani flat bread made with maida dough and a mixture of egg, tomatoes and some dry masalas and if veg then cheese and mashed potatoes are used otherwise minced meat. Fried in oil. Very delicious when eaten with green chutney, sauce and even can be eaten with veg curries.

Ingredients Serving: 4

  1. For dough Maida - 1 cup
  2. Salt as to taste
  3. Some oil
  4. For mixture: egg - 1
  5. Tomato - 1
  6. Cumin seeds - 1/4 tsp
  7. Carrom seeds - 1/4 tsp
  8. Coriander seed crushed - 1/4 tsp
  9. Salt as to taste
  10. Red chilli powder - 1/4 tsp
  11. Red colour (optional)
  12. Mashed potatoes + cheese - 1/2 cup
  13. 3/4 kadahi of oil to fry

Instructions

  1. Make a dough adding maida, salt and oil. Add a little water as required.
  2. Cover it with muslin cloth for 15 minutes and let it rest.
  3. In the meantime make the mixture. Boil the tomatoes and peel them and make a puree.
  4. Add all the ingredients and mix well.
  5. Take the egg in a bowl and whisk it into the batter.
  6. Take a small dumpling and roll on a roti. Size can be according to your choice.
  7. Now put the batter on the roti all over.
  8. Fry it, keeping the uncoated portion at the bottom in the kadahi while frying.
  9. On a medium flame it will take 2 minutes on each side.
  10. Turn it and fry the battered side.
  11. The Yummy katlama is ready.
  12. Serve it with any chutneys or curries.

thats a nice recipe... buy FYI katlama is a pure punjabi bread.. popular around patiala and bhatinda areas.... Pakistani cuisine has evolved from Punjabi cuisine...
