Ingredients Serving: 4

  1. White button mushroom diced 1 cup
  2. Fresh shelled green peas 1 cup
  3. Onion medium 2
  4. Tomato small 1
  5. Green chili 5
  6. Ginger Garlic paste 2 tbsp
  7. Chopped coriander leaves 1/4 cup
  8. Chopped mint leaves 1/4 cup
  9. Red chili powder 1/2 tsp
  10. Turmeric powder 1/4 tsp
  11. Whole spices as per choice
  12. Fennel seeds 1/2 tsp
  13. Bay leaf 1
  14. Lemon juice 1 tbsp
  15. Jeera rice 1 cup
  16. Salt to taste
  17. Oil/ghee 2 - 4 tbsp

Instructions

  1. Slice the onions as thin as possible, cube the tomato into smaller pieces.
  2. Slit the green chillies and remove the seeds and keep it aside.
  3. For cooking the rice:
  4. Wash and soak the rice for 20 to 30 minutes.
  5. Drain the water from the rice and add it to a pressure pan.
  6. To this rice add shelled green peas, whole spices (cloves,cardamom, star anise, cinnamon as per your taste) and 1 tbsp of lemon juice.
  7. Also add 2 tbsp of ghee and little salt and pressure cook the rice for 1 whistle. Note: for 1 cup of rice take 2 cups of water.
  8. For mushroom masala:
  9. In a thick bottomed pan, take 2 tbsp of ghee and saute the fennel seeds and onions till it becomes translucent.
  10. Add green chillies, ginger garlic paste, chopped herbs to the above and saute them till the oil separates.
  11. Add tomato and nicely mash it.
  12. Finally add diced mushrooms, salt to taste and saute till the masala thickens and becomes a little dry.
  13. To this add cooked rice little by little with mixing the masala evenly. Mix the contents gently in order not to mash the peas.
  14. Finally add the remaining 1 tbsp of lemon juice and stir in gently.
  15. Serve it hot with raita.
