ABOUT Puttu,Payaru,Pappadam RECIPE

Puttu is one of the staple food in southindian cuisine.Normally its served with kadala curry or sugar ,coconut mixed ghee.Recently i tried this combo and addicted to it.

Ingredients Serving: 2

  1. Puttu flour / Rice flour -1 cup
  2. Water -1/4 cup,approximately
  3. Salt - To taste
  4. Grated coconut -1/2 cup
  5. Green gram - 1/2 cup
  6. Appalam /Papas -as required
  7. Banana -1

Instructions

  1. Wash and cook the green gram in pressure cooker upto 3 or 4 whistles by adding enough water.
  2. Meanwhile the mix the flour and salt.
  3. Sprinkle the water little by little and mix with your finger tips. The flour should be moist but it should be crumble.
  4. If you take little flour press it tightly,it should hold the shape then its the right consistency
  5. Take the puttu mould or coconut shell but here i used coffee filter only.
  6. Start with the layer of coconut,prepared flour.alternate it till the end of the mould.Dont press the flour while adding.
  7. Cover with mix,meanwhile heat the idli pot with water and put the idli plate.place the filter mold on it,cover the idlipot with lid
  8. Cook it for 7-8 min.To de mould the filter,just invert in a plate tap it gently on top.
  9. Fry the pappad /appalam.
  10. Serve it warm along with payar, fried pappadam and sliced banana
