ABOUT Methi Makkai Malai RECIPE

Fresh sweet corn kernels along with fresh fenugreek leaves or dry ones and milk no malai. Makes it an easy preparation for any occasion.

Ingredients Serving: 6

  1. Sweet corn kernels 1 1/2 cups
  2. Onion medium 1
  3. Green chilli 2
  4. Garlic 4 Cloves
  5. Ginger 1 inch
  6. Cashews 6
  7. Milk 150 ml
  8. Kasuri Methi generously 4 pinches
  9. Oil 1 tbsp
  10. Cumin 1/2 tsp
  11. Salt and pepper to taste
  12. Garam masala 1 tsp
  13. Water if required

Instructions

  1. Boil sweet corn kernels. Strain and keep aside.
  2. Make a paste of onion, ginger, garlic, chillies and cashews.
  3. In a non stick pan heat oil and add cumin. As they start to crackle add the paste to it and cook on medium heat till oil separates. Remember to stir continuously as cashew might stick to the base.
  4. Add milk and garam masala and give it a boil. Add corn kernels, salt and pepper powder. Add kasoori methi and cook on medium heat for 5 minutes. Check seasonings and serve hot with any sort of Indian breads or rice too.
