Ingredients Serving: 2

  1. Maida - 2 cup
  2. Ghee or veg oil - 1/4 cup
  3. Water - as required
  4. Salt - As required
  5. Roasted gram flour(sattu) - 1/2 cup
  6. Mustard oil - 1 tsp
  7. Thymes - 1/2 tsp
  8. Mango pickle masala - 1 tsp
  9. Oil - for fry

Instructions

  1. Take refined flour in a bowl.
  2. Add ghee (melted) and salt.
  3. Add sufficient water and knead into a stiff dough.
  4. Cover with a moist cloth and rest for 15 minutes.
  5. In another bowl, take roasted gram flour(sattu).
  6. Add mustard oil, pickle masala and thymes.
  7. Add a little water and Mix all well.
  8. Stuffing is ready.
  9. Divide the kneaded dough into 8 equal portions.
  10. Apply a little ghee and roll out into thick and small puris.
  11. Place 1 tbsp stuffing mixture in the centre of the puri.
  12. Close and seal the edges.
  13. Press gently and pat with hands to flatten the kachauri a bit, keeping the sides thin.
  14. Similarly prepare other kachauris.
  15. .Heat sufficient oil in a kadai till hot.
  16. Deep-fry the kachoris on high heat till golden.
  17. Remove from oil and keep on paper towel.
  18. Enjoy hot kachauri with any chutney.
