Ingredients to make Stir fried mixed vegetable

  • Assorted vegetables (green beans, carrots, zucchini, capsicum, baby corn and mushrooms) all cut leghthwise 2-3 cups
  • garlic cut finely 2 tablespoons
  • ginger cut finely 2 tablespoons
  • Soya sauce 1/2 teaspoon
  • vinegar 1/2 teaspoon
  • salt to taste
  • Black pepper powder 1/2 teaspoon
  • olive oil or vegetable oil 3-4 tablespoons

How to make Stir fried mixed vegetable

  1. Heat oil in a wok and add garlic. Stir till it begins to change colour.
  2. Add ginger and saute for 10-20 seconds.
  3. Add the mushrooms and saute until they start sweating and release their juices. Add the rest of the vegetables after the mushrooms are almost done.
  4. Add salt to taste and black pepper powder.
  5. Add soya sauce and vinegar.
  6. Saute for a few seconds while ensuring that the vegetables are not overdone.
  7. Serve hot.

My Tip:

The wok should be hot before you start cooking. Vegetables need to be sauteed at high flame while ensuring that they do not burn or overcook.
