Ingredients Serving: 4

  1. Rice - 3 cups
  2. Urad dal - 1 cup
  3. Chana dal - 1/4th cup
  4. Tuverdal - 1/4th cup
  5. Curd - 3 tbsp
  6. Salt - as per taste
  7. Ginger & garlic paste - 2 tbsp
  8. Green chillies paste - 2 tbsp
  9. Haldi powder - 2 tsp
  10. Red chilli powder - 2 tbsp
  11. Methi leaves - 1/2 cup
  12. Chopped Coriander leaves - 1/2 cup
  13. Grated carrot - 1/2 cup
  14. Boiled sweetcorn - 1/2 cup
  15. Chopped spring onion leaves - 3 tbsp
  16. Grated cheese - 1/2 cup
  17. Peanuts - 1/4th cup
  18. Sesame seeds - 3 tbsp
  19. Mustard seeds - 2 tbsp
  20. Asafoetida - 2 tsp
  21. Curry leaves about 12-15
  22. Oil - 6 tbsp

Instructions

  1. Ingredients for the handvo batter. Soak the rice and daal for about 7-8 hours.
  2. Other ingredients for the rest of the recipe. I made the handvo in pan in 4 batches. The ingredients mentioned are for all the 4 handvos.
  3. Grind the soaked rice and dal in a grinder.
  4. Grind the rice and dal into a thick coarse paste. Into this batter add curd and salt as per taste. Mix and leave the batter to ferment for about 8 hours.
  5. This is how the fermented batter will look like.
  6. Now into the fermented batter add ginger garlic paste, green chillie paste, chopped methi leaves and Coriander leaves.
  7. After mixing all the above ingredients add the haldi powder and chilli powder .
  8. After giving the batter a nice mix it's ready to be used to make handvo.
  9. In a deep pan take 1 &1/2 tbsp oil on medium heat, when it turns hot add mustard seeds and sesame seeds.
  10. When mustard and sesame start to crackle add curry leaves, few peanuts and asafoetida. Saute this for few seconds.
  11. Now add the grated carrots and crushed sweet corn. Saute this for 2 mints and spread it well .
  12. Now on this pour 3 ladle or big spoon full thick batter of handvo. And spread it carefully on the carrots and sweet corn.
  13. Cover it with a lid and cook on low flame for 15 mins. The cooked side will be nice brown and crispy. Then carefully turn it & put 1/2 tbsp oil around the handvo.
  14. Now top the handvo with some grated cheese and again cover it & cook well on low flame.
  15. After 10 mins the handvo is perfectly ready. Transfer it on a dish. Top it with some spring onions.
  16. You can cut the handvo in desired shape and serve it hot with Coriander-mint chutney and tamarind chutney.
