ABOUT Naan-e-Barbari RECIPE

Naan-e-Barbari is a tradional Persian breakfast flat bread, which serve with saur cream, feta cheese, jam with hummus for more taste.

Ingredients Serving: 4

  1. For the bread dough 3 cups of all purpose flour
  2. 1 1/2 cups of warm water
  3. 1 1/2 tsp sugar
  4. 1 tsp instant dry yeast
  5. 1 1/2 Tsp Salt
  6. 1 tsp oil for greasing
  7. 1 tbsp sesame seeds
  8. 1 tbsp nigella seeds
  9. Some semolina for dusting the work surface
  10. For spread the bread, 2/3 cup water
  11. 1 tsp Flour
  12. 1 tsp baking soda
  13. 1 tbsp wheat bran

Instructions

  1. Take some warm water and add sugar and add yeast in a small bowl and left to till frothy
  2. In other mixing bowl mix flour salt and add frothy yeast mixture and remaining warm water in this and knead smooth and elastic dough for 5 to 10 minutes
  3. Greased bowl with some oil, place the dough, cover with plastic and let it double in size (2 hours)
  4. Meanwhile prepare a spread Mixed flour, water and baking soda in a pan brought to the boil till start to thick, continue stir this, when done keep aside
  5. Preheat the oven to 230°C and prepare lined,greased baking pans
  6. Divide the dough into 4 portions or (can also 2 size optional)
  7. Sprinkle some semolina on work surface and place the dough to start shaping
  8. Stretch and pull by dipping your fingers into the spread, shape it as oval shape, In-between use water and flour mixture over the bread to spread and give the shape to bread
  9. Sprinkle wheat bran on bottom, Place the dough on baking pan and continue shaping the bread Using your fingers make lines on the bread 1″-2″ apart
  10. Sprinkle some sesame and nigella seeds over the top
  11. Bake 10 to 15 minutes or until light golden color, switch the tray in half time
  12. Let the bread to cool down 10-15 minutes before slicing and enjoy with saur cream, fetta cheese, honey, jam and also with hummus
