ABOUT Raan-E- Sikandari /Shaan-E-Raan RECIPE

Sikandari Raan is a historical dish. It traces back to the time when Alexander The Great defeated King Porus and when asked how he would like to be treated, he said he want to be treated as a king. It was then that Alexander ordered a great banquet for him and this raan was served. Since Alexander is also famously known as Sikandar, hence this dish gets the name. Traditionally it is slow cooked in a large pit, with meat wrapped in a cloth and closing the pit with mud and burning coals so that mud and other dirt does not get inside it. It can also be baked in an oven wrapped in aluminium foil.

Ingredients Serving: 7

  1. Lamb leg or raan 2
  2. Ginger garlic paste 5 tbsp
  3. RAW PAPAYA PASTE 2 TBSP
  4. Salt to taste
  5. Kashmiri Red Chilli powder 2 tbsp
  6. roasted cumin powder 1 tbsp
  7. Roasted coriander powder 1 tbsp
  8. Green cardamom powder 1 tsp
  9. Mace powder 1 tsp
  10. GARAM MASALA 1 TBSP
  11. Turmeric 1 tsp
  12. Fennel powder 1 tbsp
  13. Hung curd or yoghurt 1 cup
  14. Rose water 2 tbsp
  15. Dried fenugreek leaves 1 tbsp
  16. Lemon juice 2 tbsp
  17. Uncooked rotis 8 to 10. (Optional)

Instructions

  1. The first thing to be done is clean the raan and make slits all along.
  2. Marinate it with all the ingredients and keep it refrigerated overnight.
  3. It is advisable to do it as it will help in getting a juicy and a succulent raan after grilling.
  4. Papaya paste helps in cooking it perfectly.
  5. Baste it with oil before grilling.
  6. Preheat the oven to the maximum and wrap the raan in as many rotis as required. This is purely optional.
  7. Bake it for nearly 3 hours. Keep checking after every 40 minutes and baste with little oil or butter each time.
  8. The rotis also will get cooked simultaneously.
  9. The rotis will also absorb the excess fats from the raan.
  10. Serve it hot with salad and buttermilk as it is super spicy.
