Ingredients Serving: 4

  1. Boiled mashed potatoes - 2 big
  2. Thinly sliced carrots - 1 small
  3. Coriander leaves - 1 & 1/2 cup
  4. Ginger small pc
  5. Green chillies chopped - 5
  6. Peanuts - 2 tbsp
  7. Chilli flakes - 1 tbsp
  8. Curd - 1/4th cup
  9. Tamarind pulp - 3 tbsp
  10. Agar agar soaked - 2 tbsp
  11. Chilled oil - 1 cup
  12. Normal oil - 1 & 1/2 cup
  13. Water - 1 cup
  14. Sugar - 2 tbsp
  15. Salt as per taste
  16. Cumin seeds - 2 tsp
  17. Turmeric - 1 tsp

Instructions

  1. Let's assemble our ingredients.
  2. Firstly to prepare tikkis in a pan take 2 tbsp oil, when it turns hot add cumin seeds and 2 chopped green chillies and let it splutter.
  3. Now add mashed potatoes, turmeric powder and salt.
  4. Mix this well and the mixture for tikkis will be ready.
  5. Once this mixture cools down take small balls and make small peda shaped tikkis and shallow fry till golden brown on both sides. The size of tikkis shouldn't be too big it should be big enough to be eaten fully with toppings in one go.
  6. Now deep fry the carrots in hot oil to get crispy carrot chips.

  8. Not for green chutney grind Coriander leaves, peanuts, ginger, green chillies, 1 tsp sugar and salt.

  10. Now take curd into this add chilli flakes and salt beat this well and keep aside for topping on tikkis.
  11. For tamarind caviar in a pan take tamarind pulp, sugar, 2 tbsp water and agar agar. Mix well and cook this on medium flame till everything dissolves well.
  12. After boiling this keep on mixing in between & let it cool down. Then pour this into a bottle we use for Ketchup. ( You can even use a syringe for this )
  13. Now take the chilled oil and put drops of tamarind mix from the Ketchup bottle into the oil. Be careful while doing this we need to put drops so don't squeeze the bottle too hard.
  14. The drops will form small ball shape and deposit down in the oil. After all the balls are ready strain out the tamarind balls and wash them with cold water and keep aside for topping. Be gentle with the balls while washing.
  15. Now it's time to get our tikkis ready. Take a tikki put some green chutney on top and then the curd mix. Finally top it with tamarind caviar and carrot chips. Repeat with other tikkis.
