Ingredients to make Bharva Karela

  • Karela (small sizes) 1/2 kg
  • onion (finely chopped) 2 large
  • fennel seeds 2 tsp
  • kalonji 1 tsp
  • poppy seeds 1/2 tsp
  • methi seeds 1/2 tsp
  • Ajwain seeds 1 tsp
  • Black peppercorns 5-6
  • garlic paste 1 tbsp
  • Whole red chillies 8 - 10
  • Whole coriander 2 tbsp
  • Green coriander chopped a fistful
  • Juice of 1 lemon
  • salt as per taste
  • Thread for tying the Karela

How to make Bharva Karela

  1. Slightly peel the karela and half boil them with salt.
  2. Make a slit with a sharp knife and remove the seeds.
  3. Roast all the seeds (jeera, coriander, black pepper, kalonji, fennel, poppy, ajwain, methi) and grind them.
  4. Roast the whole red chillies and add the garlic pods. Grind this mix with the ground masala.
  5. Also ground the karela seeds with the masala.
  6. Heat 1 tsp of oil and cook the chopped onions, till it is translucent.
  7. In a large bowl mix onions, masala and add lemon juice, salt, chopped coriander. Mix it properly.
  8. Fill the karela with this masala and tie it with a thread.
  9. Heat oil in a big wok and fry the karelas in batches. Do not overcrowd the wok.

My Tip:

Tie the karela tightly if done so the masala will not come out while frying. You can store this in the refrigerator for 3-4 days.
