Ingredients to make Danish Cookies

  • 200 gms Unsalted butter, softened
  • 150 gms Icing sugar
  • 310 gms Plain flour
  • 1 no Large egg, fresh
  • 1 no vanilla bean
  • 1 to 2 tbsp Milk
  • 2 tbsp granulated sugar, for decoration

How to make Danish Cookies

  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. Cream the butter, vanilla and icing sugar till and fluffy.
  3. Add the egg and beat till well mixed.
  4. Add the flour and fold using a spatula till the mixture comes together. If the mixture is too dry, add the 1 tbsp to 2 tbsp of milk until a soft but firm batter is formed.
  5. Create the cookie shapes using piping bag or simply dropping a tsp of batter onto the sheet. Spring some sugar (optional) and bake for 10-15 minutes or till the cookies turn nice and golden.
  6. Let cool for 10 minutes on a cooling rack then sprinkle with icing sugar.
  7. Serve with with a cup of tea or coffee.

My Tip:

Use butter that is at room temperature as it makes the beating effortless.
