ABOUT Peach cookies with chocolate ganache filling RECIPE

I find incredible joy whenever I bake and winter is my favourite baking season. I have baked these cookies without oven. These beautiful and delicious cookies are one of my most favourites! These delicacies look like ripe, fresh peaches but these are actually cookies filled with rich chocolate ganache.

Ingredients Serving: 6

  1. Butter 1 cup
  2. Powdered sugar 1 cup
  3. Egg 1
  4. Yogurt 1 teaspoon
  5. Vanilla essence 1 teaspoon
  6. Flour 3 Cups
  7. Dark chocolate 125 grams
  8. Fresh cream 80 ml
  9. Apple juice 1 cup
  10. Fine Sugar 1/2 cup
  11. Red liquid food colour 3 drops
  12. Yellow liquid food colour 3 drops
  13. Fresh mint leaves for garnishing

Instructions

  1. In a bowl take the butter, the powdered sugar and beat it until it's light and creamy.
  2. Add the yogurt and the egg. Mix it well.
  3. Add the vanilla essence and mix it properly.
  4. To this, add 1 and 1/2 cups of flour and mix it all really well.
  5. Now add the remaining flour and knead it to make a dough. Cover the bowl with plastic wrap and keep it in the fridge for 10 minutes.
  6. Prepare the baking dish by greasing it with oil and lining it with butter paper.
  7. Make small lemon sized balls with the dough and place the balls in the baking dish. Gently press the top of the balls.
  8. To bake this without oven, take a kadhai and spread 1 cup of salt in it. Place a stand in the kadhai, cover it with the lid and preheat this on medium heat for 10 minutes.
  9. Place the baking dish on the stand, cover the kadhai with the lid and bake the cookies on medium heat for 5 minutes and on low heat for 20 minutes.
  10. Bake all the cookies like this.
  11. When the cookies have cooled a bit but are still warm, turn them over and make cavities using a knife.
  12. Take some water in a bowl and heat it on low heat. Place a bigger bowl containing fresh cream on the smaller bowl and let the cream heat up for 2-3 minutes.
  13. Now add chopped dark chocolate to the cream and wait for it to melt.
  14. Mix the ganache properly and let it cool down.
  15. Fill the cavities of the cookies with the chocolate ganache.
  16. Take two cookies and lightly press them together to join them.
  17. Separate the apple juice into two bowls. In one bowl add red food colouring and add yellow food colouring to the other bowl.
  18. Take the cookies and dip one half of them in the yellow coloured apple juice.
  19. Dip the other half in the red coloured apple juice.
  20. Sprinkle some fine sugar on the cookies.
  21. Prepare all the cookies like this.
  22. Garnish the cookies with mint leaves and enjoy.
