In the winter season all the vegetables are available to make a pulao. But I like the sweet one the most with lots of veggies and dry fruits.

Ingredients Serving: 3

  1. For sweet pulao:
  2. Basmati rice-1 cup
  3. Water-2 cup
  4. Chopped carrots-1/2 cup
  5. Chopped cauliflower( slight big sized)-1/2 cup
  6. Green peas-1/2 cup
  7. Chopped beet root- 1/4 cup
  8. Cashew nuts and raisins-1/4 cup
  9. Salt- 1/2 tsp
  10. Sugar- 6-7 tsp
  11. Bay leaf-2
  12. Green Cardamom-2
  13. Black Cardamom-1
  14. Cloves-2
  15. Ghee- 4 tsp
  16. For gobi matar ki sabzi:
  17. Cauliflower florets-3 cups
  18. Green peas-1/2 cup
  19. Potato-2 medium sized ( cut into big sizes)
  20. Onion chopped-1
  21. Tomato chopped -1
  22. Masala paste ( ingredients written below)
  23. Turmeric powder-1/2 tsp
  24. Red chilli powder-1/2 tsp
  25. Dhania powder-1/2 tsp
  26. salt as per taste
  27. Oil -4 tsp
  28. Water-1.5 cup
  29. Ingredients for masala paste:
  30. Onion -1
  31. Garlic-5-6 cloves
  32. Ginger-1 inch
  33. Cumin seeds-1/2 tsp
  34. Cinnamon-1/2 inch
  35. Chilli -1 or 2

Instructions

  1. Heat a pressure cooker and put ghee in it and then roast the cashew nuts and raisins till golden brown and keep them aside.
  2. Wash and rise the rice well and keep them aside.
  3. In that pressure cooker add all the whole spices and then the chopped vegetables and saute for sometimes.
  4. Then add the rice along with water, salt and sugar and cover the lid of the cooker and cook till one whistle.
  5. Switch off the flame and mix the roasted dry fruits. Now the sweet pulao is now ready.
  6. Now prepare the sabzi by adding half of the oil in a pan and saute the cauliflower and potato till they become golden brown.
  7. In the mean time prepare the masala paste by adding all the ingredients of masala paste with little bit of water.
  8. In a kadai put remaining half of the oil in it and then add chopped onion and when they become translucent then add the masala paste along with turmeric powder, dhania powder,chilli powder and salt and then add the chopped tomato in it and cook for some time till the tomato they become slender.
  9. Then add the fried cauliflower pieces, potatoes, green peas and cook again for sometime by covering the lid.
  10. Then add water in it and allow it to boil for sometime till the vegetables are cooked completely.
  11. Switch off the flame and the curry is now ready to serve by garnishing with some coriander leaves.
