ABOUT Dry Fruits lotus (Flavoursome and power-packed) RECIPE

This is a flavousome sweet made with cashew paste and stuffed with dates, almonds and pistachios. I have given it very unique lotus-like shape. Do try it. Combination of dry fruits make this sweet power-packed, which is very good for health in winter season. So do try this unique sweet.

Ingredients Serving: 6

  1. 1 cup cashewnuts
  2. Sugar according to taste
  3. 20 deseeded dates, finely chopped
  4. 2 tablespoons almonds (soak in water for an hour and peel)
  5. 2 tablespoons pistachios powder
  6. Poppy seeds 2 tablespoons
  7. 20 Saffron strands soaked in 1/2 cup water
  8. Silver warq for garnishing

Instructions

  1. Wash cashews and soak in water for ten minutes.
  2. Drain the water and make a fine paste (add little water if required).
  3. Heat a pan add cashew paste and sugar. Mix well on low flame.
  4. Now at low flame keep stirring the paste, until it thickens and becomes non sticky and forms like a mass. It takes approximately 15 minutes to thicken.
  5. Now remove from flame and keep it aside until it cools down.
  6. Now lengthwise cut each peeled almond in 2 pieces. Soak this cut almonds in saffron water for an hour and keep aside.
  7. Now heat a pan and dry roast poppy seeds till golden on low flame. Keep it aside.
  8. To make dates mixture, add dates in the mixer jar and blend nicely. It will become like a dough. Keep it aside.
  9. Now its time to assemble all prepared things and shape up like a lotus.
  10. First make very small balls from dates mixture and roll these balls on poppy seeds. Ready all balls like this from dates dough. Keep aside.
  11. Now drain saffron water from almonds and pat dry them.
  12. Now Take cashewnuts mass and make small balls from it. ( Cashew balls should be almost double in size than ready poppy-dates balls).
  13. Roll cashew balls on silver warq . Now slightly press cashewballs with thumb from centre to make a pit.
  14. Now Keep ready poppy-dates ball in pit of cashewnuts balls and press little to stick.
  15. Sprinkle pistachio powder on edges of cashewballs as shown in pic.
  16. Atlast place slit almonds vertically on corners of poppy-dates balls. So that after assembling it looks like a lotus. ( For reference see the picture)
  17. A very unique, healthy, delicious and flavoursome sweet is ready to enjoy in winter season.
