ABOUT Sesame Peanut Puran Poli/ Obbatu/Holige RECIPE

Sesame seeds and Gur play a significant role among Indians during festivities and winters. A simple yet a delicious comfort dessert that comes handy during most of the family celebrations . Sesame Peanut stuffed Puran polis are famous in Uttarkarnataka. This is my family 's all time favorite , comfort dish . A very healthy , filling iron rich snack / breakfast/ dinner option.

Ingredients Serving: 7

  1. Peanuts 1 cup
  2. White sesame seeds 1/2 cup
  3. Jaggery 1.5 cup
  4. Green cardamom small 2
  5. Plain flour 1/2 cup
  6. Foxtail millet flour 1/2 cup
  7. Salt a pinch
  8. Turmeric powder 1/4 teaspoon
  9. Water as required to knead
  10. Cooking oil 3 tablespoons
  11. Ghee 3 tablespoons

Instructions

  1. In a wide bowl, take the flours . Add in the salt , turmeric powder and 2 tablespoons oil . Mix all the ingredients.
  2. Start adding required water gradually and knead the ingredients to form a smooth nonsticky dough.
  3. Add another tablespoon oil and grease the final dough completely . Cover and rest the dough for 15 minutes.
  4. Starting with the stuffing part , firstly , dry roast peanuts until they show discoloration, turns crunchy . Remove from the heat . Transfer roasted peanuts to a dry plate .
  5. Secondly , dry roast white sesame seeds until they turn golden . Remove from heat and transfer to a plate .
  6. Cool both the roasted ingredients completely.
  7. In a grinder , add the cooled ingredients along with jaggery, cardamom seeds into a powder . Neither too smooth nor too coarse consistency prefered.
  8. Ground mixture looks like this .
  9. Take small portions of the ground mixture and hold even small sized balls . Keep them aside .
  10. Coming to our dough , divide dough into small sized balls that are slightly larger than the sesame peanut balls .
  11. Roll each of the dough ball into a small disc . Stuff sesame peanut ball in . Seal the filling completely . Repeat steps .
  12. Sealed balls are ready.
  13. Brush sufficient oil on a baking sheet . Place one stuffed ball on the sheet . Roll the ball into a thin poli . Similarly roll remaing balls .
  14. Shallow fry the polis one by one on a hot tawa. Drizzle ghee . Add extra ghee if prefered. Shallow fry both sides until polis give out golden brown spots .
  15. Sesame Peanut Obbatus/ Puran Polis / Holiges are ready .
