Ingredients Serving: 4

  1. For puran -
  2. Gram dal (Split chana dal) 250 grams
  3. Sugar 250 grams
  4. Jaggary 100 grams
  5. cardamom powder 1/4 teaspoon
  6. Nutmeg powder 1/4 teaspoon
  7. Saffron strands few (Optional)
  8. For outer covering dough -
  9. Wheat flour 1 small cup
  10. All purpose flour 1 small cup
  11. Oil for moyan 1/2 small cup
  12. Salt 2 pinches
  13. Baking powder a pinch (Optional)
  14. Water to knead the dough


  1. Wash and soak chana dal for an hour
  2. Add sufficient (less than double) water and cook dal with nutmeg powder in pressure cooker for 2 to 3 whistles(it should be soft)
  3. After pressure subsides open the lid and mash dal with Pav Bhaji masher. Add sugar and jaggery
  4. Mash it and cook in cooker only. Keep stirring in between
  5. Cook dal till Semi solid
  6. Put the mixture in Puran Machine and grind to a fine paste
  7. Add cardamom powder and Saffron strands and mix well
  8. Allow it to cool completely and then make medium balls
  9. For outer covering -
  10. Take all dry ingredients mentioned above for dough
  11. Add water little by little and knead a soft dough
  12. Keep it aside for some time and knead again adding some more oil
  13. Now take a very small portion of dough and make a ball.
  14. Roll out little with hands and put Puran ball
  15. Seal it from all sides
  16. Make a ball
  17. Dust it with some rice flour or Maida and roll thin Poli
  18. Shallow fry it in a skillet with some clarified butter (ghee) on low heat from both sides till golden
  19. It tastes awesome when served hot with some more ghee
